How do I determine which versions of IIS are installed on these machines?
go to Start->Run type inetmgr and press OK. If you get an IIS configuration screen. It is installed, otherwise it isn't. You can also check ControlPanel->Add Remove Programs , Click Add Remove Windows Components and look for IIS in the list of installed components.

You can determine it from the Control Panel. Follow the below steps.
1)Just go to the Control Panel and Select Administrative Tools.
2)Open Internet Information Service Manager(IIS).
3)Go to Help and Select About Internet Information Services.
One window will appear which contains the version number of Internet Information Services.
